Smoked Ribs

Jon . has added a photo to the pool: At the same BBQ where the tofu cheesecake made an appearance, I smoked two full racks of ribs with hickory chips. The above photo was taken about 3 hours into cooking which is the minimum time I would say these ribs should be cooked. If you don’t have a BBQ with a smoker tray or you don’t have a smoker box, no problem! Just put your chips in a tinfoil pouch, poke a lot of holes into it, and place it directly over the heat-spreader on your grill (under the grilling surface). These ribs were basted every 30 minutes using President’s Choice BBQ sauce and cooked for about 3.5 hours.
