dyogi has added a photo to the pool: I have one of those cylindrical smokers that holds a charcoal pan at the bottom, a water pan directly above the charcoal, two racks to hold meat, and a high domed cover. I run it for 12 to 14 hours, using nearly a full bag of charcoal, so I like to load it up. I’ve just lifted the lid on 5 racks of ribs and four chickens (visible beneath the ribs). The ribs are done after about 3 hours, but the chickens will continue to cook for about 12 to 14 total hours.
