Dear Piggy Ribs,

I have to check out rib fest this coming year! I just recently moved to Chicago, and tried to go to my first of the city's many festivals this past summer. But ribfest? That has to happen next year. I used to live in New Hampshire in my youth, and knew of the great BBQ places in that area. Are there any places you suggest here in the city? Thanks for the festival ideas.

I wanted to pass along a great food story for your viewing pleasure. Celebrity chef and grilling guru Guy Fieri crowned Kristina Vanni of North Hollywood, Calif., the National Pork Board’s “Next Pork Personality” after a live grilling showdown at the Food Network New York City Wine & Food Festival. The summer-long search asked Americans to star in their own two-minute video highlighting their best tips for sizzlin’ up pork on the grill.

For more information on this story, as well as video and photos of Guy and the finalists in New York City, please go to
http://akamediainc.com/SMNR/guy_fieri_crowns_next_pork_personality-1026.html

Thank you very much for your time.

We've had a few racks of back ribs that we can't get the membrane to peel off..it just comes apart...do you have any insight on this? The first 15 or so racks we did were fine and the membrance came right off, the last four are friable and just tear in small fragments. thanks for any help you can offer..

Yes good advice about oiling the grates down first. Problem is that most bbq ribs brushes are either like paint brushes, which leave hairs in the meat, or they are plastic, which melts over a hot grill grate.

Solution: Use some of the fat that you trim off of the smoking ribs (the biggest chunk works the best) and stick a fork in it. Then rub the fat all over the hot grill grates. The hotness will melt the fat, creating a layer of good ol' pork fat on the grill, which works as well or even better than plain old oil.

I would like to see oven baked rib recipes, as an apartment dweller. Last night, for the first time, I made good pork ribs at home. Realllly good, and I'm a rib snob.
